It has been more than 130 years since 1891, when Niemon Akashi, the founder of the company, started shochu production in Ebino City, Miyazaki Prefecture. The Ebino Basin in Miyazaki Prefecture is surrounded by the Kyushu Mountains and the Kirishima Mountain Range, a lush natural environment suitable for shochu production. Blessed with excellent raw materials grown in this natural environment and high-quality limpid water from the virgin forests of the Ebino Highlands, our company produces “good shochu that will intoxicate your soul” by practicing careful brewing using traditional brewing techniques. Since its establishment, the brewery has also been involved in rice farming, and in recent years has been growing sweet potatoes and making shochu using raw materials grown by the brewery itself.

MEIGETSU

The origin of the name “Meigetsu” is a representation of the full moon over the red pines growing in the Ebino Plateau, with the wish that “people's hearts will be as round, bright, and peaceful as the full moon. The characteristic of “Meigetsu” is that it is made by blending sweetpotato shochu with rice shochu as a hidden flavor, so that it retains the flavor of sweetpotato shochu, but with a slight aroma of rice shochu and a soft taste.


MEIGETSU PREMIUM WHITE

Rare sweet potato “Kona Homare” is used as the main ingredient. The secret ingredient is a blend of rice shochu made from Hinohikari rice from Ebino, a brand of rice produced in Miyazaki Prefecture. The result is a gem that harmonizes the gentle aroma and sweetness of the aged sweet potato shochu with the faintly fragrant floral flavor of the rice shochu. Using Miyazaki yeast, this authentic sweetpotato shochu is a continuation of the Miyazaki tradition, and is available only in Miyazaki Prefecture.


?NANNA

The product name, “? NNANA” was created in 1999, when the product was still in the development stage, when a person tasting the finished sake said, ”NANA! What's this? (What is it? What is this good shochu?) (What is this good shochu?). Based on a sweet potato shochu made mainly from “Kogane Sengan,” a sweet potato produced in Southern Kyushu, we blended several kinds of original shochu to create an authentic sweet potato shochu with a discreet sweet potato aroma and a deep sweet potato flavor.

Chu-MONDE

Spirits “Chu-MONDE” is a distilled plum liquor made with fully ripened Nanko plums from Kishu using authentic shochu production technology. Nanko plums are added in two batches to the secondary mash made from rice and rice malt, fermented, and distilled under reduced pressure. After distillation, the distillate is stored for 15 years. It is characterized by its gorgeous plum aroma and clean, dry taste.

How to drink recommended by the brewery, recommended snacks

The flavor of “Meigetsu” is maximized by drinking it at a warm temperature with lukewarm hot water. The warmer temperature of the shochu gives it a sweet, dusty aroma of potato shochu and a gorgeous aroma of rice shochu, and the soft, rich sweetness in the mouth is followed by a lingering aftertaste of umami.

A recommended snack is the chicken sashimi, which is served with the sweet soy sauce unique to southern Kyushu. The sweetness of the shochu goes well with the sweetness of the soy sauce, and the sashimi of chicken meat gives it a refreshing aftertaste that tempts you to continue eating and drinking again.
