SONO NO TSUYU
Koji is brewed with “three-day koji” that takes three days to make, and both the primary and secondary brewing are done in a jar and distilled in wooden barrels. Sake lees from ginjo sake is used in the secondary brewing. The taste is soft and sweet when drunk with hot water, and the rich flavor can be enjoyed as if one were drinking a crisp junmai sake.
